More tournaments with intermediate timeouts

most of the tournaments posted are either 1 day sprints, 3/7 days or long haul. why not offer more 7 and 14 day timeout options?

Probably because they are far less popular.
You could join an active club and ask the leader to create a tournament with your preferred time frame
