So it seems that the only time this trinity and that idea of a trinity came about was after the Apostles all died out and when the Catholic church started.

The Trinity is more clearly revealed in conjunction with God's economical operation being revealed.
Most people's theistic thinking is just that God want to be objectively acknowledged and objectively worshipped as "there". The revelation of God dispensing Himself into man to be divine Life for man is progressively revealed. And in conjunction with this oikonomia (economy) of God the triune nature of God is also more revealed.
